Microwave Potato Chips

Slice Potato slices 1/16 thick

Cover a micro-wave plate with
paper towels (at least 2)

Brush potato slices with olive
oil on both sides and then
lightly salt them

Place slices on top of paper
towels on plate not overlapping

Microwave on each side for
about 2 1/2 minutes.  Let cool
for a minute.

Do the same with sweet
potatoes.  Lightly salt them.  If
you prefer you can add a little
brown sugar about 15 seconds
before the last  2 1/2 minute
session is complete.  I like the
sugar to be melted.

Squash Soup

Slice 6 large yellow squash into
edible sized quarter pieces

Slice & quarter one medium

Slice some fresh mushrooms

Add one tablespoon minced

Add garlic salt & pepper

Add diced Tofu if you wish

Sautee all of the above

Add one package of Lipton
Noodle soup or add vegetable
bouillon cubes and whatever
pasta you prefer

Add 8 cups of water

Simmer over low heat after the
mixture has begun to boil

Mexican Bean & Tofu Casserole

Prepare 2-3 cups of black beans
according to instructions on

Saute in a large pan 1 sliced &
quartered onion

Do the same with one green bell

Cut up 2 cups of Tofu into little
square pieces

Mix all of the above in the saute pan

Add 1-2 tablespoons of minced
garlic and also add salt and pepper
as much as you like

Mix one package of Taco seasoning
into mix and follow directions on the

Add about 1 cup of tomato sauce

Add some tortilla chips (about 14-16
broken into pieces

Mix about 2 cups of sharp cheddar
cheese into the mix

Toss everything together really good
Pour contents into a large casserole

Cover the top with a layer of sharp
ceddar cheese

Bake at 350 for about 35-40 minutes

Barbecue Riblets with
Mango-Pineapple Salsa

1/3 cup chopped fresh mango
1/3 cup chopped fresh pineapple
2 tablespoons finely chopped red
1 tablespoon lime juice
1 tablespoon finely chopped
jalapeno pepper
1/2 teaspoon  grated gingerroot
1 package (10 oz.) Morningstar

1 cup hot cooked brown rice


1. In small bowl stir together
mango, pineapple, onion, lime juice,

a horticulture specialist.

A garden is a pond where plants and insects and fish and amphibians and even snakes and other animals like to be
for their own reasons.

A garden is a living being's own heart where minute by minute impressions and thoughts are harvested for
memories in old age.

A garden is a graveyard with flowers in front of headstones where memories rest in peace as long as our planet
stays around long enough to stay round.

A garden is a place in our souls that is free and virtually private where we think, dream, hope and wish.

Garden is a beautiful word that is spoken of my millions of people every minute of the day.

Earth is the only big round garden planet that we know exists in the universe and any possible others are extremely
far away.

The gardens that are part of us all, all animals and living beings, are very fragile but special and unique.

Every living thing on this garden planet is unique and special.

The stars, moons and planets surrounding Earth could be described as a sparkle garden but nothing survives on
them, nothing like Earths' beautiful living animals.
